Summer Salmon Recipe

salmon recipe 1This is one of my new favorite recipes. What I love so much about my Summer Salmon Recipe is that its full of different tastes and textures. Plus it is very simple to make which leaves more time for us to be outside enjoying the sunshine and the beach!

 

 

 

 

Summer Salmon Recipe 

Grocery List: 

  • Quinoa
  • Veggie or Chicken Broth (low sodium)
  • Coconut Oil
  • Grilled Salmon
  • Lemon
  • Sea Salt
  • Roasted Brussels Sprouts
  • Asparagus
  • Red Peppers

Directions: 

  1. In a pot add 2 cups of broth with 1 cup of quinoa and bring to a boil. Once it’s at a boil bring it to a simmer for 10-15 minutes.

2. Cut all veggies into small pieces and toss into a pan with a teaspoon of coconut oil. Cook until soft.

 

 

3. Wash salmon and place into a frying pan coated with coconut oil. Squeeze a fresh lemon over the salmon and use a dash of sea salt and pepper. You can also add in other spices that you really like as well. Pan sear on low heat for 10 minutes or until Salmon is cooked. You can also grill the Salmon over low heat if you’d like.

4. Place quinoa, all veggies in a bowl and add Salmon on the top.

 

5. Serve & Enjoy!
