Looking for the perfect healthy crunchy snack? These veggie chips are for you, especially when you are craving chips!

Often times we crave crunchy chips when we are feeling a little stressed since crunching helps reduce the stress in our body.  These are a healthy and colorful alternative plus the himalayan salt gives our body the right type of salt to help reduce our salt cravings.

You will find these satisfying and yummy and discover that even your kids enjoy them.

Veggie Chips

Ingredients

  • 2 sweet potatoes
  • 2 carrots
  • 2 beets purple or golden or both
  • 2 parsnips
  • Coconut or olive oil
  • Himalayan salt

Directions

  1. Preheat oven to 375 degrees.
  2. Cut all root veggies into thin slices and place on a baking sheet. Keep space in between each veggie slice. If you have extra just add to another baking sheet. Use a paper towel to blot dry the veggies before placing them into the oven.
  3. Add a little bit of oil on to each veggie slice and sprinkle a bit of salt over the veggie chips.
  4. Bake for 20 minutes or until crisp (depending on your oven). Cool on the baking sheet for a few minutes. Transfer to a bowl and snack away!
