Healthy Recipes Creamy Pea & Avocado Soup

Every time a new season begins, I like to give my body a healthy jumpstart by eating real whole and nourishing foods that help to cleanse my body from the inside out.

When I do one of my Five Day Jumpstarts, I notice that I have more energy, my mood is balanced and my cravings tend to disapear.

One of my favorite healthy and easy recipes that I love to make in the Spring is my Creamy Pea and Avocado Soup. It is super simple to make and it really satisfies and nourishes my body.

 

Simple Delish Recipe: Creamy Pea and Avocado Soup 

Grocery List:

  • 4 Cups Vegetable Broth (low sodium)
  • 2 Cups Frozen or Fresh Peas
  • 2 Avocados
  • A Handful of Fresh Basil (or you can use mint leaves)

Directions:

  1. In a small saucepan, bring the vegetable broth to a boil.
  2. Add the peas and simmer for 5 minutes.
  3. Add this to a blender with the avocados (skin and stone removed) and fresh herbs. Blend until smooth.
  4. Garnish with herbs and season with pepper.
