I love Pizza, it’s been one of my favorite “foods” for as long as I can remember. My husband and I have pizza date nights most Friday evenings and make pizza together. We started this tradition after we moved out to California and couldn’t find any pizza to match our love of the delicious pies we shared back New York City. Plus making pizza at home is so much fun (and healthier too!)
Today I’m sharing one of our new recipes with you our California Cauliflower and Grilled Peaches Pizza. This is great way to encourage kids to eat more veggies, plus it’s gluten-free and is perfect for anyone who may have any gluten sensitivities. The best part about this is that you can make the pizza crust and put on different toppings each time you have pizza night.
Cauliflower Pizza Crust Grocery List:
- 1 head of cauliflower
- 1/2 cup water
- 1/2 teaspoon salt
- A dash of pepper
- 1/2 cup of grounded flaxseeds
- 1 large egg (organic is the best)
Pizza Toppings Grocery List:
- Grilled Peaches
- Arugula
- Feta Cheese
- Sun dried Tomatoes
- 1/2 Cup of Pesto (recipe to make your own here)
- or any toppings you love
Directions:
- Preheat oven to 400 degrees
- Line a baking sheet with parchment paper
- Puree cauliflower in a food processor until finely ground. A good blender will also do the trick
- Cook ground cauliflower, water, and salt together in a skillet over medium-high heat until most of the water evaporates, 5 to 6 minutes. Drain excess water of out pan. You should have about 1 1/2 cups cauliflower pulp
- Stir cauliflower, egg, salt, flaxseeds, and pepper together in a bowl to form a soft dough
- Gather dough into a ball and place in the center of the prepared baking sheet. Press dough into circle about 1/4-inch thick
Bake in the preheated oven until golden brown and set, about 40 minutes - Cool and turn crust over before adding your favorite pizza toppings
- If you are making the grilled peaches. Cut the peaches into slices and drizzle coconut oil on top of each one with a dash of cinnamon. Grill the peaches until they are a little brown. After the peaches are cool add as a topping to your pizza.

Question – Could you steam or cook the cauliflower first, and THEN puree it? Or is it really important to puree it first and then cook as you mentioned here? Seems like it might be easier the other way.
Hi Laurie! I’ve only ever done it this way but try it out the other way and let me know how it goes. I’m sure it works either way!
