If you caught my recent healthy tip of the week video you would have heard me chatting about my obsession and love of coconut oil. We really have been using it every day for almost all of our meals. Last night we made coconut crusted ahi and it was out of this world delicious. Just for your taste buds, try this Simple Delish Recipe!
Grocery List
- 1/2 cup of coconut oil
- 1-2 ahi tuna steaks (4-6 oz each)
- 1/2 cup of shredded coconut
- A bunch of asparagus
Directions
- Cover the ahi tunas with coconut oil, then place the shredded coconut on the tuna steaks.
- Place the tuna in a pan and grill or sauté (depending on your taste buds) on medium heat for 15-20 minutes
- Meanwhile heat a pan on medium heat and place a spoonful of coconut oil in the pan. Place the asparagus in the pan and cook for 10 minutes.
- Serve & Enjoy.
