Simple Delish Recipe: Tahini Brussels Sprouts
Growing up I was never a huge fan of Brussels Sprouts but this past year I have fallen in love with Brussels Sprouts. I eat them at least three times a week and honestly can’t get enough!
As your health coach I am constantly trying to find new recipes that I enjoy so I can share them with you!
My latest recipe is just one of my favorite Brussels Sprouts dishes I have ever made. I posted the picture on Instagram and got so many recipe requests!
Grocery List:
- 1 Large Sweet Potato
- 6-8 Large Brussels Sprouts, cut in half
- 1 Avocado
- 1 Cup of Quinoa
- 1 Spoonful of Tahini
- A handful of cranberries
- A spoonful of coconut oil
Directions
- Cook 1 cup quinoa to 2 cups water
- Drop the spoonful of coconut oil on a griddle or pan. When the oil is warm drop in the Brussels Sprouts & Sweet Potatoes. Cook until soft.
- In a bowl place a few spoonfuls of Quinoa, a spoonful of tahini, the Brussels Sprouts, Sweet Potatoes, cranberries and sliced avocado.
- Enjoy!
