Eating Green In Ireland

In September my boyfriend and I went to Ireland for our friend’s wedding. The last time I was in Ireland I was a junior in college and wasn’t the healthiest eater. We were 21 years ago exploring the world and trying foods we had never heard about before. It was fun, but when I got back to the states that summer I started to look at my life and the foods I was eating and started to become a healthier eater.

Now being 33 years old and traveling I found eating in Ireland more difficult. I no longer eat meat and most traditional meals in Ireland still have meat as the main dish. I was craving my kale and spinach and most restaurants we found only had potatoes as a vegetable.

Thank goodness we found the only vegan cafe in Ireland, Hibiscus Wilde Vegan Food Bar, in the Ferocious Mingle Marcade in Dublin.

A huge smiled spread across my face when walked in and I saw a kale and carrot salad with tahini dressing, veggie soups, green smoothie and  vegan cupcakes!

This cafe had only been open a few months and the owner Laura is a beautiful spirit. Like most people in Ireland, Laura had been brought up eating dairy and meat. She wanted to become healthier and researched different diets and tried different ones before deciding to become vegan. She noticed almost instantly that she wasn’t getting head colds anymore and had more energy. She was feeding her body and soul with these amazing foods and knew that she wanted to share this with the rest of Ireland.

We had the kale and carrot salad with tahini dressing and it was delicious… just what my body needed!  I wanted to take away everything she had on the menu but we didn’t have a fridge in our hotel room.

Next time we are in Ireland, this will be our first stop! For all your world travelers if you are ever in Dublin you should check out the Hibiscus Wilde Vegan Food Bar and ask for Laura!
