Bean, Corn & Avocado salad
Grocery List:
- 1 can, 14 ounces, black beans, rinsed and drained (rinse a ton to get all of the sodium off)
- 2 cups of corn, I like to grill the corn first
- 1 small red bell pepper, seeded and chopped
- 1/2 red onion, chopped
- 1 1/2 teaspoons ground cumin
- 1 lime, juiced
- 2 tablespoons olive oil
- 1 sliced avocado
Direections:
- Combine all ingredients in a bowl.
- Let stand at least 15 minutes for flavors to combine, then toss and serve.
Katie B’s Tip:
- I like to put this in the fridge for 10 minutes to cool if I make the corn on the grill!
Chickpea Burgers
Grocery List:
- 1 Can of an chickpeas (make sure you rinse them throughly to get all of the sodium off)
- 3 tablespoons of Tahini
- A dash of pepper
Directions:
- Heat oven to 400 degrees
- Place chickpeas, tahini and pepper in the blender and blend until chickpeas are smooth. When done blending scoop the mixture out and place on a baking sheet and shape into patties
- Bake for 25 minutes or until they are golden brown
- Take out of oven and allow them to cool down before eating
Katie B’s Tip:
- Enjoy the chickpea burger on a pita with arugula, avocado and tomatoes. You can add your own seasoning here too maybe some parsley or lemon
- You can also enjoy this chickpea burger on top of a yummy salad
- I like to add hummus to my chickpea burger too! You can never get enough hummus 🙂
Fruit Kabobs
Grocery List:
- wood skewers
- bananas, strawberries, raspberries and blueberries
Directions:
- Cut up fruit and then arrange them via the American flag or just alternate blueberries, bananas and strawberries for a delicious treat
Sweet Potato Fries
Grocery List:
- Depending on the amount of people at your party get 1 sweet potato for each guest
- A pinch of Sea Salt
- Olive Oil. I love my flavored olive oils, try Rosemary or Herb or you can add rosemary or any other herbs to them
Directions:
- Preheat oven to 450°F. Toss sweet potato wedges with oil, salt and pepper.
- Spread the wedges out on a rimmed baking sheet.
- Bake until browned and tender, turning once, about 20 minutes total.
