Healthy Halloween

I love Halloween! When I was younger I trick-or-treated until my junior year in high school, not just for the candy but I had so much fun getting dressed up! Now I love seeing all of my friend’s kids in their costumes and going to Halloween parties!

I used to eat a lot of candy around the holidays, especially Halloween. Now my vice is raw chocolate (there is no sugar in it) and green smoothies 🙂

Sugar is very addicting and once you start eating it your body starts craving more. I know the temptations are everywhere, every store you go into has displays of candy front and center. It is hard to walk by without tossing a bag of candy into your shopping cart.

Here is one of my favorite fall snacks! Pumpkin seeds are full of fiber, antioxidants,  vitamins and easy to make!

Grocery List:

  • 1 1/2 cups pumpkin seeds
  • 2 teaspoons olive oil
  •  Pick Your Spice! A dash of:
  • salt (optional)
  • garlic powder (optional)
  • cayenne pepper (optional)
  • seasoning salt (optional)
  • cajun seasoning (optional)

Directions:

  1. Preheat oven to 300 degrees F.
  2. Wash the pumpkin seeds under cold water. While it’s OK to leave some strings and pulp on your seeds (it adds flavor) clean off any major chunks.
  3. Toss pumpkin seeds in a bowl with the oil and spice of your choice.
  4. Spread pumpkin seeds in a single layer on baking sheet.
  5. Bake for about 45 minutes, stirring occasionally, until golden brown.
  6. Enjoy!
