Introducing Kelly’s Guacamole

I like to think of myself as a nutrition enthusiast! I own every nutrition related book, my favorite being The Omnivore’s Dilemma, and am constantly researching new recipes on the internet. I even decided to study nutrition in college. I recently earned my Bachelors degree from Indiana University in Dietetics, Go Hoosiers!, and I’m working towards becoming a Registered Dietitian. Some of my favorite activities include participating in races, going to see a theater performance in Chicago, or simply reading a good book. Out of all my passions in life, nutrition has been the only one that has been constant.

I must admit, I decided to study Dietetics because I wanted to learn how to lose weight. Yes, guilty as charged. But, as I went further into my studies, I truly became fascinated with nutrition and our bodies response to food. It no longer became an interest of mine to simply learn the “right way” to eat in order to lose weight. I wanted to eat to be healthy and nourish my body. My Medical Nutrition Therapy course completely changed my thinking. We learned how to use nutrition as a medical approach as well as a preventative method for diseases such as heart disease or diabetes. Immediately, I was captivated by the healing power of food. Once I started focusing my eating habits towards being healthy, I saw a positive change in my mood, physical appearance and mental health. It feels really good to be healthy!

Summer is my absolute favorite time of the year! I love gtoast_rilling out and all of the different vegetables that are available this season. Cooking and trying new recipes has become one of my favorite hobbies. I believe guacamole is the ultimate condiment and has been one dish I have perfected. I love avocados! I don’t go a morning without making my signature guacamole, what my friends call it, with eggs and toast. Food, cooking and the workings of nutrition are so much fun to me. There is so much to learn in this field I feel that I am constantly discovering new facts, recipes or cooking methods that I can’t wait to share with you.

Kelly’s Guacamole


Serving Size: 

  • Party of 5

avocado_
Grocery List:

  • 3 medium avocados
  • 3 cloves garlic
  • ¼ white onion
  • ¼ tomato (seeds removed)
  • 1 jalapeño (seeds removed)
  • 1 TBS cilantro
  • 1 TBS lime juice
  • Salt (as needed)


guacDirections:

  1. Simply peel the skin off and place the avocados into a bowl (remove pits)
  2. Add the lime juice in order to get the avocados to a smooth consistency
  3. Finely chop all of the ingredient and blend with the avocados.

 

 

Kelly Tip:

  • Toast bread, scramble an egg and add quac for a yummy breakfast
