One of the best parts about being back home in New Hampshire is getting to try my mom’s yummy dishes. She is such an amazing cook, I wish I had paid more attention when I was younger. Trying to make up for lost time now 🙂
This is the perfect meal for those summer nights when it is too hot in the kitchen to cook. It is also perfect for the busy woman on the go because you can make extra and take it to lunch the next day in a mason jar! Two meals made in less than 5 minutes, now that is my Simple Yummy Deliciousness.
Here is my mom’s summer pesto chickpea salad!
- 1 can of chick peas (Eden Farms are the best brand because there is no BPA in their cans)
- 1/2 cup of pesto (I love pesto so I tend to add a little more of it)
- 10 grape tomatoes, cut in half
- 1/2 cucumber chopped
- 8 cut up artichokes
* My mom said, have fun with it! If you like other veggies or different spices add them!
Make Your Own Vegan Pesto!
- 1/2 cup of basil
- 1/2 cup of pinenuts
- 1 tablespoon of olive oil
Just blend it up in your blender or nutri/magic bullet and you have pesto without any of the added “stuff” that we don’t really need.
