Just in time for the beginning of Summer, I found my new favorite alternative to a veggie burger or falafel. The Chickpea burger. Chickpeas are full of fiber and protein so they will fill you up and give you long lasting energy. Best part? They are super simple to make!
Grocery List:
- 1 Can of an chickpeas (make sure you rinse them throughly to get all of the sodium off)
- 3 tablespoons of Tahini
- A dash of pepper
Directions:
- Heat oven to 400 degrees
- Place chickpeas, tahini and pepper in the blender and blend until chickpeas are smooth. When done blending scoop the mixture out and place on a baking sheet and shape into patties
- Bake for 25 minutes or until they are golden brown
- Take out of oven and allow them to cool down before eating

- Enjoy the chickpea burger on a pita with arugula, avocado and tomatoes. You can add your own seasoning here too maybe some parsley or lemon
- You can also enjoy this chickpea burger on top of a yummy salad
- I like to add hummus to my chickpea burger too! You can never get enough hummus 🙂
