I love my veggies and am constantly thinking of different ways to eat them. This is a super quick recipe for dinner with minimal prep and cooking time.
Grocery List:
- Mushrooms
- Swiss or Red Chard
- Slivered Almonds
- Red Peppers
- Green Onions
- Oranges
- Low Sodium Soy Sauce
- Red Pepper Flakes
- If desired, shrimp
Directions:
- Cut up all of the veggies
- In a large bowl marinate the shrimp with freshly squeezed oranges, low sodium soy sauce, a hint of ginger and red pepper flakes
- Toss the veggies and the almonds in the skillet and then cook on medium heat
- Cook the veggies for five minutes then toss the oranges and shrimp into the skillet
- Cook all together for five minutes
- Eat and Enjoy

- Serve with brown rice or quinoa
- Add more greens. You can toss in spinach and kale to the dish
