Simple Delish Recipe: Veggie & Shrimp

I love my veggies and am constantly thinking of different ways to eat them. This is a super quick recipe for dinner with minimal prep and cooking time.

 

 

 

 

 

Grocery List: 

  • Mushrooms
  • Swiss or Red Chard
  • Slivered Almonds
  • Red Peppers
  • Green Onions
  • Oranges
  • Low Sodium Soy Sauce
  • Red Pepper Flakes
  • If desired, shrimp

Directions:

  1. Cut up all of the veggies
  2. In a large bowl marinate the shrimp with freshly squeezed oranges, low sodium soy sauce, a hint of ginger and red pepper flakes
  3. Toss the veggies and the almonds in the skillet and then cook on medium heat
  4. Cook the veggies for five minutes then toss the oranges and shrimp into the skillet
  5. Cook all together for five minutes
  6. Eat and Enjoy

Katie B Tips: 

  • Serve with brown rice or quinoa
  • Add more greens. You can toss in spinach and kale to the dish
