Summer Peachy Salad

One of my favorite things to do when I’m cooking is adding fresh fruit to my salads. I find that when I add color and sweetness to my lunch my body doesn’t crave sweets at 3 p.m. like I used to. Just in time for the end of Summer here is one peachy salad you won’t want to miss.

Grocery List

  • 3 ripe peaches, cut in half, pits removed
  • Fresh mixed greens (arugula, baby spinach, baby kale – about 8-10 cups)
  • 1 cup fresh strawberries 
  • 1/3 cup slivered almonds 
  • A little bit of goat cheese
  • 1/2 of Avocado
  • Coconut Oil
  • Olive Oil
  • Balsamic Vinegar

  1. Cut the peaches into halves and brush coconut oil on top. Preheat the grill to high heat. Place peaches, cut side down, on the hot grill. Grill for about five minutes, or until the peaches are soft and have grill marks. Remove peaches from the grill, cool to room temperature, and slice into halves again.
  2. Place arugula, sliced grilled peaches, strawberries, avocados, almonds, and fresh goat cheese in a large salad bowl. Add olive oil and balsamic vinegar and then toss and enjoy!
