It is getting cold outside but warm in my kitchen! Whenever it is a little chilly outside, I know that my body needs some warming foods to keep me nourished. I just love this soup because it is super easy to make and keeps my joints feeling healthy with it’s anti-immflamatory effects.
Simple Delish Recipe: Curry Lentil Soup
Grocery List
- 2 Cups of Dried Lentils
- 1 Large Carrot, Chopped
- 2 Large Sweet Potatoes, Chopped
- 1 Medium Onion, Chopped
- 1 large Celery Stalk, Chopped
- 10 Mushrooms, Sliced
- 1 Large Orange Pepper, Chopped
- 1 Teaspoon of Turmeric
- 1 Teaspoon of Curry
- 1 Teaspoon of Garlic Powder
- 5 Cups of Veggie or Chicken Stock
- Fresh Thyme
Directions
- Combine all ingredients in a 4-5 quart crock pot. Cover and cook on low for 8-9 hours or until lentils are tender.
