I love mushrooms, especially grilled mushrooms! That has been my favorite part of this summer. We finally have a grill, after living inNYC for almost 10 years this has been a plus for California living. One of our favorite things to do is grill veggies. Our latest creation was this delicious recipe.
Grocery List:
For 2, you can add more mushrooms & tomatoes
- 2 Large Portobello Mushrooms (1 Mushroom per person)
- Sun Dried Tomatoes
- Feta Cheese
- Balsamic Vinegar
- 2 Large Plum Tomatoes
- 1 Cupof Spinach
- Olive Oil
- A dash of Sea Salt
Directions:
1. Sprinkle a little bit of olive oil and sea salt on the mushrooms
2. In a dish safe to use on the grill place the tomatoes & spinach, drizzle with some olive oil
3. On medium heat grill the veggies for about 15 minutes
4. Remove from the grill and put some feta cheese, sun dried tomatoes and balsamic vinegar on the mushrooms
5. Add everything to your plate and enjoy 🙂
