Chickpea Indian Veggie Recipe Simple Delish Recipe: Chickpea Indian Veggie Dish 

I have been craving spicy foods lately, so I decided to experiment with some Indian spices like curry and cumin to help satisfy my tastebuds.

This Chickpea Indian Veggie Recipe is super easy to make and is perfect as we transition our bodies from summer to fall and need a little more warming energy.

I included one of my favorite spices to this recipe with Turmeric. This spice helps support your immune system, helps reduce inflammation in the body and helps promote a healthy digestive system and joint health. It doesn’t have a strong taste, so you can add it to your morning green smoothie, and is what gives curry that beautiful yellow-orange color.

Chickpea Indian Veggie Dish 

  • Prep Time: 5 Minutes
  • Cooking Time: 10 Minutes
  • Makes 2-3 Meals


Chickpea Indian Dish Recipe Grocery List: 

  • 1 can of Eden Farms Chickpeas (BPA free lined cans)
  • 1 cup or Cauliflower
  • 1 cup of Broccoli
  • 1/2 cup of Carrots
  • 1/2 cup of Brussels Sprouts
  • 1 cup of Spinach
  • 1 tablespoon of Coconut Oil
  • 1 teaspoon of Cumin Powder
  • 1 teaspoon of Curry Powder
  • 1 teaspoon of Turmeric Powder

 

Directions:

  1. Cut the Carrots, Brussels Sprouts, Broccoli and Cauliflower
  2. At the same time add 1 tablespoon of coconut oil to a pan on medium heat
  3. Toss the veggies into the pan and cook for 5 minutes until they are soft and crisp and maybe a little brown.

4. Then add spinach and chickpeas for a minute, and cook just until spinach is cooked

5. Add in spices! You can decide how much of each spice you would like to add. I love curry more than cumin so I tend to be heavier on the curry and turmeric!
